Pickled Beetroot, Feta & Walnut Salad

A vibrant, restaurant-worthy salad with Pickled Beetroot, creamy feta, crunchy walnuts and fresh mint, finished with a honey balsamic dressing.

Serves: 4

Ingredients

• 2 cups A & J's Pickled Beetroot
• 100g rocket
• 150g feta cheese
• ½ red onion, thinly sliced
• ½ cup walnuts, roughly chopped
• ¼ cup fresh mint leaves

Dressing

• 2 tbsp olive oil
• 1 tbsp balsamic vinegar
• 1 tsp honey
• 1 tsp Dijon mustard
• Black pepper

Method

1. Arrange rocket on a large serving platter.
2. Drain the Pickled Beetroot and arrange over the rocket.
3. Scatter with red onion, feta, walnuts and fresh mint.
4. Whisk together olive oil, balsamic vinegar, honey and Dijon mustard.
5. Drizzle the dressing over the salad.
6. Finish with freshly cracked black pepper.
7. Serve immediately.
