Beetroot Relish & Feta Tart

A stunning savoury tart with rich Beetroot Relish, creamy feta and a golden puff pastry base. Perfect for lunch, entertaining or a light dinner.

Ingredients

• 1 sheet puff pastry, thawed
• ¾ cup A & J's Beetroot Relish
• 150g feta
• 2 eggs
• ½ cup thickened cream
• Fresh thyme
• Black pepper

Method

1. Preheat oven to 200°C conventional or 180°C fan-forced.
2. Line a 22cm tart tin with the puff pastry.
3. Spread Beetroot Relish evenly over the pastry.
4. Crumble feta over the relish.
5. Whisk together eggs and cream.
6. Pour the egg mixture over the tart.
7. Sprinkle with fresh thyme and black pepper.
8. Bake for 25 to 30 minutes, until golden and set.
9. Allow to cool for 5 to 10 minutes before slicing.
